A great classic of the Larzac always at the highest level! A Summit of Mediterranean flavors, a great fineness of tannins, a final tight still but lavish in its aromas. Nose intoxicating and precise, with complex notes of muscade, spicy, black fruit and ash. Anime in a minty freshness. The texture of mouth remains closed and the spices persistance shows.
A blended cuvée: 50% Carignan, 10% Grenache and 40% Syrah, from 30- to 60-year-old vines, grown on schist soils. Didier’s green capital is entirely managed by his cows, the winegrower’s other great passion, and chemicals haven’t touched his vines for more than 30 years. The estate is certified organic and biodynamic.
Pascal and Gilles Soulas heirs of a beautiful estate in Pouzols (Hérault), had teamed up with the winemaker Laurent Vaillé (La Grange des Pères), to draw the substantive marrow of this vineyard. A first vintage in 2016 taken from vineyards located on the heights of Aniane for a production of 3000 bottles annually.
