From the Producer:
Harvest-picking by hand. The grapes are sorted twice (when picking the grapes and on the sorting table) then partially de-stemmed. (when needed, depending the quality of the berries a third sort is done with our optical machine), and put in stainless still thermo-regulated tanks. The alcoholic fermentation can begin with natural yeasts from the grape berries during around 3 weeks. Pumping-over (the must) very soft in order to be very careful about the substance and order to get the purest and most representative wine we can have. Soft pressing.
Then the wine is put in French oak barrels of 228 liters for 15 % new barrels. The malolactic fermentation takes place in barrels and the wine is aged 14 months, then bottled without fining or filtration following the moon calendar.

"Lovely medium ruby body with nose of fresh raspberry and strawberry along with secondary notes of forest floor, cedar, and light leafy notes. High acidity couples with incredibly fine tannins on the palate with red fruit and forest flavours as before, with a lovely dry finish that is crisp, and medium length. Really nice wine, very enjoyable and crisp. Who knows what age might do."
