Grape variety: 60% syrah, 20% mourvèdre, 20% grenache.
Average age of the vines: 30 years.
Yield: 25 hl / ha
Vineyard: the Syrah and Grenache vines are planted on a limestone plateau (lakeside limestone) facing north. On Aniane, the land being facing due South and North-West, we have installed the Mourvèdre (Chateauneuf-du-Pape type rolled pebbles)
Vinification: The different grape varieties are vinified separately. Harvest previously destemmed and crushed. Vinification using indigenous yeasts. Maceration of around 30 days depending on the vintage. Exclusive pigeage on the three grape varieties.
Aging: Aging in oak barrels of one, two or more wines for 24 months. Blending of the three grape varieties two months before bottling. Bottled in Lune Vieille, unfiltered wine.
