Merlot Merlot Merlot is the gentle one. Plum, black cherry, a little cocoa; round tannins and no sharp edges. That softness is why it is the grape Singapore reaches for most often — it asks for no decanting, no ceremony, and it does not pick a fight with food. Every Merlot we sell is a Bordeaux. None of them says so on the label. This is the one thing worth knowing before you buy. A French label names the place, not the grape. So you will not find a bottle in our shop with “Merlot” printed on the front — you will find Saint-Émilion, Pomerol, Saint-Julien. Learn those three words and you can shop Merlot with confidence for the rest of your life. Saint-Émilion — the Right Bank: Merlot leads the blend here, on clay and limestone, and this is where its plummy, velvety character is purest. Château la Gaffelière (1er Grand Cru Classé), Clos La Gaffelière, Clos La Madeleine, Château Cadet-Bon, La Fleur d’Armens. Pomerol: the plushest Merlot in the world, from one of the smallest appellations in France. Château Nenin, Château Croix de Gay. Médoc — the Left Bank: here Merlot plays the other role, softening Cabernet Sauvignon’s frame. Château Talbot, Château Gloria, Château Branaire-Ducru, Château Langoa Barton, Chasse-Spleen, Sociando-Mallet, Château La Lagune, Château Haut-Marbuzet. Second wines — the buy we’d make: the same cellar, the same team, the same vineyards, a fraction of the price. Lacoste-Borie (Grand-Puy-Lacoste), Les Fiefs de Lagrange, Les Pélerins de Lafon-Rochet, La Dame de Montrose, Réserve de la Comtesse (Pichon Comtesse de Lalande). Where a beginner should start If Merlot appeals to you because it is easy, go to the Right Bank first: a Saint-Émilion is Merlot at its most generous. If you want a little more grip behind a steak, take a Left Bank second wine instead — that is Merlot with Cabernet’s backbone standing behind it. Cabernet Sauvignon Cabernet Sauvignon Cabernet Sauvignon is the structured one: blackcurrant, cedar, pencil lead, and a firm tannic frame that holds a rich meal together and lets a bottle age for twenty years. If Merlot is the cushion, Cabernet is the spine. In Bordeaux, Cabernet Sauvignon is spelled “Médoc” A New World label prints the grape on the front. A Bordeaux label prints the commune instead — and the commune tells you far more, because it tells you the soil. Cabernet Sauvignon’s classical home is the deep gravel of Bordeaux’s Left Bank, where it ripens late and slowly. Nowhere on this page will you see the words Cabernet Sauvignon on a bottle. You will see these names instead: Saint-Julien: the balanced middle of the Médoc — Château Talbot, Château Gloria, Château Branaire-Ducru, Château Langoa Barton, Les Fiefs de Lagrange. Pauillac & Saint-Estèphe: the firmest, longest-lived expression — Réserve de la Comtesse (Pichon Comtesse de Lalande), Lacoste-Borie (Grand-Puy-Lacoste), Château Haut-Marbuzet, La Dame de Montrose, Les Pélerins de Lafon-Rochet. Haut-Médoc, Moulis & Margaux: the value ground — Château La Lagune, Château Sociando-Mallet, Château Chasse-Spleen (Moulis), Bel Air de Siran (Margaux). Pessac-Léognan: gravel, smoke and graphite, just south of the city — La Chapelle de La Mission Haut-Brion, Château de Fieuzal. One thing nobody tells beginners Cabernet Sauvignon is almost never alone in Bordeaux. It is blended — usually with Merlot, often with Cabernet Franc and Petit Verdot — because the blend is the point: Cabernet brings structure and Merlot brings flesh. That is why many of these wines appear on our Merlot page too, and why a “Cabernet” from Bordeaux tastes nothing like a varietal Cabernet from elsewhere. Pinot Noir Pinot Noir Pinot Noir is the delicate one: red cherry, raspberry, rose petal, forest floor. Pale in the glass, light on tannin, long on perfume. It is the red that works with duck, mushrooms, char siew and even salmon — the red that never shouts over the food. In France, Pinot Noir is spelled “Burgundy” Almost every red Burgundy in existence is 100% Pinot Noir. The label simply refuses to say so: it gives you the village instead — Gevrey-Chambertin, Chambolle-Musigny, Pommard, Santenay, Givry. Those are not other grapes. They are Pinot Noir with an address. And then there is the hiding place nobody expects: Champagne. Pinot Noir is the backbone of most Champagne blends, and a Champagne labelled Blanc de Noirs is Pinot Noir pressed pale. If you like Pinot, you already like Champagne — you just didn’t know why. Côte de Nuits: the perfumed, ageworthy end — Gevrey-Chambertin (Domaine Trapet, René Bouvier, Hubert Lignier), Chambolle-Musigny (Felettig), Morey-Saint-Denis (Hubert Lignier). Côte de Beaune: rounder, earthier — Pommard 1er Cru Clos des Épeneaux (Comte Armand), Corton Clos du Roi Grand Cru (Pousse d’Or), Savigny 1er Cru Marconnets and Santenay Vieilles Vignes (Vincent Girardin). Côte Chalonnaise — the door in: real Burgundy at a price that does not require a decision — Givry “Cellier aux Moines” from Domaine Joblot, and Girardin’s Cuvée Saint-Vincent Rouge. Champagne: Bollinger, Roederer, Pol Roger, Taittinger — and the growers, Eric Rodez in Ambonnay Grand Cru and Clandestin in the Aube. The bait and the better bottle Type “Pinot Noir” into any search box and you will be shown a New World bottle with the grape on the label. Fine wines, many of them. But the village names above are the same grape in the place it came from, farmed by people whose families have been reading that hillside for generations. Chardonnay Chardonnay Chardonnay is the great shape-shifter. On cool limestone it comes out lean, taut and mineral, smelling of oyster shell and lemon; grown warm and raised in oak it turns round, nutty and golden. Nothing else covers that much ground, which is why it is the white grape the world plants most. Almost none of our Chardonnays say “Chardonnay” on the label Of the 35 Chardonnays on this page, exactly two print the grape name on the bottle. This is the single most useful thing a beginner can learn about French wine, so here it is plainly: Chablis is Chardonnay. Meursault is Chardonnay. Puligny-Montrachet is Chardonnay. Mâcon, Pouilly-Fuissé, Saint-Véran, Viré-Clessé — all Chardonnay. And a Champagne marked Blanc de Blancs is 100% Chardonnay too. The label names the vineyard because in France the vineyard is what changes; the grape is taken for granted. Chablis: the steel end — cold, saline, cut like a blade. Domaine Droin. The Mâconnais — where we would send you first: white Burgundy without the white-Burgundy price. Pouilly-Fuissé and Saint-Véran from Olivier Merlin; Mâcon-Milly-Lamartine and Viré-Clessé from the Héritiers du Comte Lafon, the biodynamic Mâconnais estate of Dominique Lafon. The Côte de Beaune: the summit — Meursault (Vincent Girardin, Pernot-Belicart), Puligny-Montrachet (Domaine Sauzet, Pernot-Belicart). Richer, deeper, built to age. Blanc de Blancs Champagne: Chardonnay with bubbles — Agrapart Extra Brut 7 Crus, Eric Rodez Blanc de Blancs, Taittinger Comtes de Champagne. And the two that do say it: Bourgogne Blanc Chardonnay from Domaine Pigneret, and Mâcon Chardonnay from the Héritiers du Comte Lafon. If “Chardonnay” has meant something big and buttery Start in the Mâconnais. A Pouilly-Fuissé from Olivier Merlin gives you the ripeness and the texture you already like, without the make-up — the fruit does the work instead of the oak. If you want the opposite pole, go straight to Chablis. Meursault and Puligny are worth the wait; they will still be there when you are ready. Syrah / Shiraz Syrah / Shiraz Shiraz and Syrah are the same grape. Australia calls it Shiraz, France calls it Syrah, and the two names have come to mean two styles: Shiraz ripe, sweet-fruited and powerful; Syrah darker and savoury — black pepper, cured olive, smoked meat, violets, and a streak of something almost bloody. Same vine. Different accent. It is far and away our largest holding: 50 wines. If you drink Shiraz, the French shelf you want is the Rhône In the northern Rhône, Syrah stands entirely alone on terrifyingly steep granite. Hermitage, Côte-Rôtie, Crozes-Hermitage and Saint-Joseph are Syrah and nothing else — the purest form of the grape anywhere. In the southern Rhône it leads a blend instead: a Châteauneuf-du-Pape is Grenache-led with Syrah and Mourvèdre giving it colour, spine and pepper. Further south still, in the Languedoc and Roussillon, Syrah does the same job for a third of the money. Northern Rhône — pure Syrah: Hermitage La Chapelle (Paul Jaboulet Aîné) and Hermitage Les Bessards (Delas); Côte-Rôtie from Gerin and Jasmin; Crozes-Hermitage from Alain Graillot, Yann Chave and David Reynaud; Saint-Joseph from Guigal and André Perret. Southern Rhône — Syrah in the blend: Châteauneuf-du-Pape from Clos des Papes, Vieux Télégraphe, Château de Beaucastel, Domaine de la Janasse and Usseglio; Côtes du Rhône from Guigal. Languedoc & Roussillon — the grower ground: Faugères from Léon Barral, Pic Saint-Loup from Clos Marie, Terrasses du Larzac from Montcalmès, Domaine de La Marfée near Montpellier, Domaine Gauby at Calce. Provence: Château Simone in red (Palette), and Syrah in the blend of the pale dry rosés — Miraval, M de Minuty, Domaine Ott. Coming from Australian Shiraz? Don’t start at Hermitage. Start with a Crozes-Hermitage. Same grape, same hillside country, a fraction of the price, and Alain Graillot is the reference name there. Then a Saint-Joseph. Then, once black pepper has become a pleasure rather than a surprise, Côte-Rôtie and Hermitage — and you will understand what all the fuss is about. Sauvignon Blanc Sauvignon Blanc Sauvignon Blanc is what most people mean when they ask for “something crisp and dry”. Lime, grapefruit, cut grass, white flowers, and a mouth-watering finish that resets the palate. In Singapore it is the natural white: chilli crab, steamed fish, green mango salad, goat’s cheese — it handles all of them. Looking for a Sauvignon Blanc? Its homeland is Sancerre. Not one bottle on this page has the words “Sauvignon Blanc” on the label — and that is exactly the point. The grape’s home is the eastern Loire, on hills of flint and chalk called Sancerre and Pouilly-Fumé, and those two names are the ones you learn instead. This is where the grape stops being a fruit bowl and starts being a wine: less tropical, more stone. Organic & Biodynamic Organic & Biodynamic Wine Organic farming means the vineyard is worked without synthetic pesticides, herbicides or fertilisers. Biodynamic goes further: the estate is treated as one living organism, with composts and plant preparations in place of chemistry, and the vineyard work timed to the calendar. Neither is a flavour, and neither is a promise of quality on its own. What they reliably tell you is that somebody is out in the rows doing the work by hand — and in practice, the growers who farm this way tend to be the ones paying the closest attention to everything else as well.
